Lightly Spiced Three Bean Salad


  • 2Tbsp extra virgin olive oil
  • 2x 400g tins of mixed bean salad
  • 1 large red onion finely diced
  • ½ teaspoon finely diced garlic
  • 1 tsp of cumin
  • 3 heaped Tbsp tomato relish (we use award winning Ballymaloe country relish, which is available to buy in Linen House)
  • Fresh parsley finely diced
  • Salt and pepper to taste


Heat the olive oil in a high sided frying pan and add the diced onion and garlic and cook for two minutes on a medium heat

Then add the mixed beans and the cumin and mix through

Stir regularly avoiding any catching on the pan for a further 2 minutes

Add the tomato relish and fold through the bean mix and turn down to a gentle simmer

Add the fresh parsley and seasoning to taste and set aside to cool

Three bean salad is delicious on its own but we recommend stuffing it in a quesadilla and serving it with heaps of sour cream, yum!!
